Favorite Friday: Fall
I am a summer girl through and through, but I wanted to share some of my favorite things about fall. I hope you'll share some of your favorites too.
- Pumpkin bread
- Roasting Pumpkin seeds (super easy and delicious)
- Hot cider
- Going to the apple orchard
- Changing leaves
- Cooler weather for hiking
- Curling up under a blanket to read a good book or watch a soccer game
- Cool, crisp nights
- The view from my writing office window
Isn't God magnificent!
Here's a favorite fall recipe of mine. Hope you'll enjoy it!
Stuffed Baked Apples
4 large apples, cored (I like McIntosh or Gala)
3/4 cup brown sugar
1/4 tsp. nutmeg
1/8 tsp. ground cloves
1 tsp. cinnamon
4 tablespoons butter, cut into pieces
1/4 cup raisins (you can chop them up or leave them whole)
Wash and core apples. Mix the rest of the ingredients and stuff the apples with the mixture.
Bake 20 minutes at 425 degrees in an oven safe dish. (A small glass casserole dish works best).
Fun toppings: drizzle with caramel, top with vanilla ice cream, top with Dulce de Leche ice cream, top with whip cream.
